Artichokes and Mushrooms in Green Sauce
Easy and healthy recipe for artichokes with mushrooms, sofrito, and broth, served with soft-boiled eggs. Perfect for a low-carb dinner.

Ingredients
- 400 units artichoke
- 30 to taste extra virgin olive oil
- 5 to taste salt
- 2 to taste pepper
- 150 units onion
- 15 clove of garlic
- 100 units mushroom
- 240 glass of broth
- 20 sprig of parsley
- 100 units egg
- 50 units lemon
Method
- Clean the artichokes by removing the harder leaves, peel the stem, and cut them into quarters. Submerge the artichokes in water acidified with lemon and parsley to prevent oxidation.
- Prepare the mollet eggs in the air fryer according to the manufacturer's instructions.
- Boil the artichokes in boiling water for 15 minutes. Drain and set aside.
- In a pan, prepare a sofrito with olive oil, chopped onion, and minced garlic. Add the sliced mushrooms and sauté for a few more minutes.
- Add the cooked artichoke quarters to the sofrito. Cover with broth, add minced parsley, salt and pepper, and cook for 10 more minutes over medium heat.
- Serve the artichokes with mushrooms in green sauce accompanied by the mollet eggs.
