Moist Banana Bread Muffins
Super moist and aromatic muffins with ripe bananas and chocolate chips. Easy and foolproof way to use up ripe fruit.

Ingredients
- 75 g butter
- 400 units banana
- 50 ml olive oil
- 75 g white sugar
- 75 g brown sugar
- 100 units egg
- 200 g flour
- 5 teaspoon of baking powder
- 5 teaspoon of baking soda
- 5 teaspoon of cinnamon
- 3 to taste salt
- 100 g chocolate chips
Method
- Brown the unsalted butter until smooth and creamy.
- Mash the ripe bananas into a purée and add them to the butter along with the olive oil, white sugar, brown sugar, and eggs. Mix the wet ingredients well.
- In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Fold the dry ingredients into the wet and mix until a homogeneous dough is formed.
- Add the chocolate chips to the dough and stir gently to distribute them.
- Lightly grease an oven-safe muffin or loaf pan. Pour the batter into the molds.
- Sprinkle some sugar on top of the dough.
- Bake at 180°C for 20 minutes, until golden and fluffy.
- Let the muffins cool in the pan for a few minutes before unmolding and serving.
