Banana Chocolate Cake

Ingredients
- 300 units ripe banana
- 85 units egg yolk
- 150 units egg white
- 225 g coconut sugar
- 150 ml coconut oil
- 5 bean vanilla bean seeds
- 1.5 g ground cinnamon
- 1 g ground nutmeg
- 15 g baking powder
- 2 to taste salt
- 225 g cake flour
- 80 g 70% chocolate chips
Method
- Mash the ripe bananas with the egg yolks and coconut oil until smooth. Set aside.
- Whip the egg whites with a whisk or in a stand mixer until almost stiff. Add the coconut sugar and continue whipping for 1 or 2 more minutes until a firm meringue forms.
- Sift the cake flour with the baking powder, ground cinnamon, ground nutmeg, vanilla bean seeds, and a pinch of salt.
- Fold the mashed banana and egg yolk mixture into the meringue. Add the sifted dry ingredients and chocolate chips, mixing very gently with a spatula just until everything is combined, without overworking to maintain airiness.
- Lightly grease a mold and add the mixture.
- Bake in a preheated oven at 180 degrees (top and bottom heat with fan if available) for 35 to 40 minutes, until cooked through.
