JB's Banana Bread
Tender banana bread with a soft crumb, caramelized crusts, and intense banana flavor. Perfect toasted with butter.

Ingredients
- 300 cup of all-purpose flour
- 5 teaspoon of baking soda
- 3 teaspoon of salt
- 3 teaspoon of ground cinnamon
- 1 teaspoon of allspice
- 400 units ripe banana
- 200 cup of brown sugar
- 165 units egg
- 20 unit egg yolk
- 80 cup of sour cream
- 80 tablespoon of unsalted butter
- 80 cup of vegetable oil
- 12 teaspoon of vanilla extract
Method
- Mash the bananas with a potato masher in a large bowl until mostly smooth.
- Add the brown sugar, eggs, extra yolk, sour cream, melted butter, vegetable oil, and vanilla extract.
- Whisk until all wet ingredients are combined.
- Sift the baking soda into a bowl and add the flour, salt, ground cinnamon, and allspice.
- Whisk the dry ingredients until well combined.
- Pour the dry ingredients over the wet ingredients.
- Fold in with a spatula using circular motions until the the flour is just incorporated, leaving a few small lumps.
- Crumple a long piece of parchment paper to soften it and line a loaf pan, leaving overhangs on the sides for easy removal.
- Pour batter into the prepared pan and smooth the top.
- Preheat oven to 180ºC (160ºC fan).
- Place the pan in the center of the oven.
- Bake for 70 minutes, rotating the pan halfway through, until a wooden skewer inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then lift by the paper and transfer to a wire rack.
- Cool at least 1 hour before slicing.
