Red Wine Pork Cheek Rice
A rich and creamy rice dish featuring tender pork cheeks braised in red wine.

Ingredients
- 150 units red pepper
- 150 units green bell pepper
- 240 units carrot
- 150 units onion
- 30 clove of garlic
- 800 g pork cheeks
- 800 ml red wine
- 1000 ml caldo de carne
- 240 units pear tomato
- 15 tablespoon of tomato paste
- 5 tsp sweet paprika
- 300 g rice
- 50 g wheat flour
- 5 to taste Salt
- 2 to taste Pepper
Method
- Chop the bell peppers, onion, and carrots.
- Mince the garlic cloves.
- Season the pork cheeks with salt and pepper.
- Dredge the pork cheeks in flour.
- Grate the pear tomatoes.
- Chop the remaining onion and garlic for the rice sofrito.
- Sear the pork cheeks in a pot with oil for two minutes per side.
- Add the chopped vegetables to the pot and sauté for 10 minutes.
- Add the pork cheeks, red wine, and beef broth until the ingredients are covered.
- Cover the pot and cook over medium heat for 120 minutes.
- Remove the pork cheeks to a plate and blend the vegetables with the resulting broth.
- Shred the pork cheeks, removing the bones.
- Sauté the onion and garlic in the same pot.
- Add the concentrated tomato and grated tomato, stirring until the water evaporates.
- Add the sweet paprika and rice, stirring until the grains are pearly.
- Add the shredded pork cheeks and the blended broth to the pot.
- Heat the remaining beef broth and gradually add it to the rice while stirring constantly until it's done.
- Let the rice rest off the heat for 10 minutes before serving.
