Lotus Root and Peanut Pork Soup

Ingredients
- 150 g peanuts
- 500 g pork ribs
- 400 g lotus root
- 30 g dried oysters
- 20 g dried squid
- 30 g red dates
- 2000 ml water
- 5 to taste Salt
Method
- Peel the lotus root and cut it into pieces.
- Prepare the peanuts, pork ribs, dried oysters, dried squid, and red dates.
- Place the peanuts in a large pot.
- Add the pork ribs, lotus root, dried oysters, dried squid, and red dates to the pot.
- Pour the water into the pot.
- Bring the water to a boil over high heat.
- Reduce heat and simmer for 3.5 to 4 hours.
- Salt the soup to taste before finishing cooking.
- Serve the hot soup in individual bowls.
