Single Serve Shakshuka
A quick and easy single-serving shakshuka recipe, perfect for when you don't want leftovers.

Ingredients
- 15 to taste olive oil
- 15 tablespoon of tomato paste
- 200 g diced tomato
- 5 clove of garlic
- 2 to taste garlic powder
- 2 to taste paprika
- 2 to taste chili flakes
- 100 g lentils
- 50 to taste water
- 120 units egg
- 5 to taste parsley
- 30 g feta cheese
Method
- Mince the garlic.
- Dice the tomatoes.
- Heat a pan with olive oil over medium heat.
- Add the tomato paste and cook until reduced.
- Add the diced tomatoes, minced garlic, garlic powder, paprika, chili flakes, and lentils.
- Pour in the water, cover the pan, and cook over medium-low heat for 20 minutes.
- Mash the tomatoes with a spoon or spatula.
- Crack the eggs over the mixture.
- Cook uncovered for 1 minute.
- Cover the pan and cook for an additional 2 minutes for a runny yolk.
- Sprinkle fresh parsley on top.
- Add crumbled feta cheese before serving.
