Catalan Spinach and Goat Cheese Stuffed Sweet Potato
Delicious roasted sweet potato stuffed with sautéed spinach, pine nuts, raisins, and gratinated with goat cheese.

Ingredients
- 500 units sweet potato
- 20 tablespoon of olive oil
- 30 g pine nut
- 40 g raisin
- 300 g spinach
- 20 tablespoon of butter
- 15 tablespoon of olive oil
- 5 to taste salt
- 2 to taste pepper
- 100 slice of goat cheese
Method
- Cut the sweet potatoes in half.
- Brush the sweet potato halves with olive oil.
- In a pan with olive oil, sauté the pine nuts.
- Add the raisins to the pan, then incorporate the spinach, stirring well to sauté.
- Scoop the flesh from inside the sweet potatoes and place it in a bowl.
- Add a little butter to the sweet potato in the bowl.
- Add the Catalan-style spinach to the bowl with the sweet potato, season with salt and pepper, and mix everything well.
- Bake the sweet potatoes for half an hour.
- Fill the sweet potato skins with the mixture from the bowl.
- Place slices of goat cheese on the filling and gratin with a blowtorch or in the oven until golden.
