Pear Tart with Crispy Puff Pastry
Christmas pear tart with homemade puff pastry, extra butter, and a hint of cinnamon. Crispy on the outside, creamy on the inside.

Ingredients
- 500 g puff pastry
- 500 g puff pastry
- 100 g butter
- 50 g butter
- 900 units pear
- 100 g sugar
- 50 g sugar
- 5 to taste cinnamon
- 60 unit egg
Method
- Place a sheet of puff pastry on the work surface.
- Distribute pieces of butter in the center of the puff pastry sheet.
- Sprinkle sugar over the butter.
- Cover with the other sheet of puff pastry.
- Sprinkle sugar on the surface to prevent sticking to the rolling pin and gently roll out.
- Use a plate as a guide to trim the dough, leaving an excess edge.
- Cut fringes on the excess edge of the dough.
- Braid the fringes, alternating from one side to the other, always leaving one in the middle.
- Tuck the tips of the fringes inward into the puff pastry.
- Clean the pears without peeling them.
- Cut the pears into thin slices with a mandoline or very carefully.
- Cut all pear slices in half.
- Sprinkle sugar and cinnamon over the puff pastry base.
- Distribute small piles of butter over the sugar and cinnamon.
- Arrange the pear slices over the base.
- Brush the surface with beaten egg.
- Preheat the oven to 200º C with fan.
- Bake until the tart is golden and crispy.
