Sugar-free Carrot Cake
A healthy version of the Brazilian classic: fluffy carrot cake with a creamy chocolate ganache.

Ingredients
- 300 units carrot
- 180 units egg
- 120 cup of coconut oil
- 100 cup of Erythritol
- 240 cup of oat flour
- 15 tablespoon of baking powder
- 250 can of heavy cream
- 40 tablespoon of cocoa powder
- 15 tablespoon of butter
- 50 cup of Erythritol
Method
- Add carrots, eggs, oil, and sweetener to a blender.
- Blend on high speed until a shiny, homogeneous cream is obtained.
- Sift the oat flour into a large bowl.
- Pour the blender mixture over the flour and stir with a spatula until combined.
- Add the baking powder and mix gently to aerate the dough.
- Grease an oven-safe pan with a little oil.
- Preheat the oven to 180°C.
- Pour the batter into the greased pan.
- Bake for 35 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and let cool completely before unmolding.
- Combine heavy cream, cocoa powder, sweetener, and butter in a small pot.
- Cook over medium heat, stirring constantly with a spatula.
- Reduce heat and continue stirring until the mixture thickens and acquires a creamy, shiny consistency.
- Cut the cake in half lengthwise to get two layers.
- Spread a layer of chocolate cream over the base of the cake.
- Place the other half of the cake on top.
- Cover the entire surface with the rest of the chocolate cream and cut into square portions.
