Chickpeas with Carbonara Spinach

Ingredients
- 400 g cooked chickpea
- 90 g diced cured ham
- 60 g fresh spinach
- 80 units egg yolk
- 80 g grated Parmesan
- 2 to taste ground black pepper
- 5 to taste salt
Method
- In a bowl, add the egg yolks, grated Parmesan, a pinch of salt, and ground black pepper. Mix everything well until you get a smooth cream.
- Rinse the cooked chickpeas well under the tap to remove excess liquid.
- Heat a pan over medium heat and add the diced cured ham. Brown until lightly crispy.
- Add the fresh spinach to the pan and sauté briefly until softened. Stir in the rinsed chickpeas and sauté for a few minutes to combine the flavors.
- Turn off the heat and pour the egg yolk and Parmesan mixture over the chickpeas. Stir quickly until the sauce becomes creamy and coats all the ingredients.
- Serve immediately in deep plates to enjoy its creaminess.
