Strawberry Cheesecake Cookies
Soft and chewy sugar cookies stuffed with a creamy vanilla cheesecake filling and jammy strawberries.

Ingredients
- 120 g cream cheese
- 30 g white sugar
- 115 g unsalted butter
- 100 g white sugar
- 60 units egg
- 5 teaspoon of vanilla extract
- 200 g wheat flour
- 150 cup of strawberry
- 20 to taste white sugar
Method
- Mix the cream cheese with the sugar in a small bowl until smooth.
- Place small portions of the cream on a baking sheet lined with parchment paper and freeze.
- Cook the chopped strawberries with sugar in a saucepan over medium heat until their liquid reduces, then let cool.
- Beat the butter with the sugar in a large bowl until creamy.
- Add the egg and vanilla extract to the butter mixture and beat again.
- Add the flour and mix with a spatula until a manageable dough is formed.
- Add the cooked strawberries to the dough and mix gently to combine.
- Take a portion of dough and flatten it in the palm of your hand.
- Place a small ball of frozen cream cheese in the center of the dough.
- Close the dough, completely enclosing the filling to form a ball.
- Roll the ball in a bowl of granulated sugar to coat it.
- Preheat the oven to 180°C.
- Place the dough balls on a baking sheet.
- Bake for 10-12 minutes until the edges are lightly golden.
- Remove from the oven and let the cookies cool before eating so the filling sets.
