Arayes with Crunchy Pita
Spiced meat-filled pita breads, toasted and crispy, typical of the Middle East. Ready in under 30 minutes with a creamy yogurt sauce.

Ingredients
- 400 g ground beef
- 150 units onion
- 15 clove of clove of garlic
- 20 handful of parsley
- 5 to taste salt
- 5 tablespoon of paprika
- 5 tablespoon of cumin
- 300 units pita
- 100 g yogurt
- 30 tablespoon of tahini
- 10 to taste parsley
- 5 clove of clove of garlic
- 2 to taste salt
- 40 to taste lemon juice
- 20 to taste oil
Method
- Grate the onion and drain it well with your hands to remove all the water.
- Grate the garlic cloves, chop the parsley, and mix them in a bowl with the ground meat, salt, paprika, and cumin until all the spices are well integrated by hand.
- Cut the pitas in half to open them and fill them with the meat mixture, leaving about a finger's thickness.
- Heat a pan over medium heat with a little oil and toast the outside of the stuffed pitas very well.
- Lower the heat to medium-low and cook until the meat is completely cooked through.
- Prepare the sauce by mixing the yogurt, tahini, chopped parsley, grated garlic, salt, and lemon juice.
- Serve the crispy arayes with the sauce on the side.
