Red Tuna Loin over Toasted Miso Noodles

  1. On a shallow plate, mix the white sesame seeds, brown sugar, garlic powder, and poppy seeds.
  2. Pat the tuna loins very dry with paper towels, brush with sesame oil, and press them into the mixture until well coated on all sides.
  3. In a small bowl, combine the soy sauce, rice vinegar, and sriracha to prepare the tuna sauce.
  4. Cook the wide wavy noodles al dente in boiling salted water, reserve one cup of the cooking water, and rinse them with cold water to stop the cooking.
  5. Prepare the ingredients for the noodles: press the garlic cloves, grate the fresh ginger, and chop the green scallion.
  6. Heat a cast iron skillet over medium-high heat with a thin film of olive oil. Sear the tuna loins for 1 and a half minutes per side without moving them, and 20 seconds on the narrow sides until golden brown.
  7. Let the tuna loins rest on a cutting board for a couple of minutes.
  8. In a cold steel pan, arrange in a circle the white miso, pressed garlic cloves, grated ginger, white sugar, chili flakes, chopped scallion, and white sesame seeds. Add the soy sauce, rice vinegar, chili oil, and toasted sesame oil.
  9. Heat the neutral oil until it begins to smoke and pour it over the ingredients in the pan. Stir well until everything dissolves.
  10. Add the noodles to the pan with a splash of the reserved cooking water and stir until they are saucy and shiny.
  11. Slice the tuna loins thinly like tataki.
  12. Arrange the toasted miso noodles on the plate and top with the tuna slices. Drizzle with the prepared sauce and serve immediately.
