Tuna Tinga Quesadillas
Mexican quesadillas with tuna, tomato and chipotle sauce, perfect for a high-protein, flavorful dinner.

Ingredients
- 240 units tomato
- 38 units onion
- 5 clove of clove garlic
- 10 to taste chipotle chili
- 5 teaspoon of chicken broth
- 5 to taste salt
- 240 can of tuna in water
- 2 to taste pepper
- 5 to taste spice
- 90 units corn tortilla
- 120 g cheese
- 170 units avocado
Method
- Chop the tomatoes, onion, garlic clove, and chipotle chili to taste.
- Heat a pan and brown the tomatoes, onion, garlic, and chipotle chili, flipping them as they brown on both sides.
- Transfer the browned mixture to a blender, add the chicken broth and salt, and blend until you get a smooth sauce.
- In the same pan or another, add the drained tuna in water and brown it for a few minutes.
- Pour the blended sauce over the tuna, add pepper and spices to taste, and cook for a few more minutes to integrate the flavors.
- On the corn tortillas, spread the grated cheese, place the tuna tinga on top, and fold or close the tortillas.
- Cook the quesadillas in a hot pan for a few minutes on each side until the cheese melts and the tortillas are crispy.
- Serve the quesadillas hot and add avocado slices on top. Optionally, add a little extra sauce.
