Chocolate Cloud with Sweet Potato and Lentils

Ingredients
- 240 units egg
- 300 cup of cooked lentils
- 400 unit sweet potato
- 60 tablespoon of honey
- 60 g dark chocolate
- 30 tablespoon of cocoa powder
- 50 g walnut
- 20 ml olive oil
Method
- Boil the thinly sliced sweet potato along with the can of lentils for 10 minutes. Remove and mash while hot with the dark chocolate pieces.
- Add the egg yolks to the mixture and beat well to combine. Incorporate the cocoa powder to enhance the chocolate flavor (optional). If you only use cocoa without chocolate, add a little olive oil.
- In another bowl, whisk the egg whites with honey and a few drops of lemon juice until you get a firm and frothy meringue.
- Fold a third of the meringue into the sweet potato and lentil mixture, integrating with gentle, enveloping movements, then add the rest of the meringue in the same way.
- Grease an oven-safe mold with butter and sprinkle with flour (or use parchment paper). Pour the mixture into the mold and spread the chopped walnuts on top (optional).
- Bake at 170 degrees until a toothpick inserted comes out clean, approximately 40 minutes. Let cool completely.
- Unmold the chocolate cloud when it is cold. Serve as is, its smooth texture melts in your mouth.
