  1. Pour the milk and cream into a pot. Add the cinnamon stick, orange peel, lemon peel, and sugar.
  2. Heat the mixture over medium heat and, just before it boils, remove it from the heat. Let it infuse for a few minutes.
  3. Whisk the egg and egg yolks in a bowl. Add them to the saucepan with the flavored milk and mix well until combined.
  4. Cut the brioche bread into thick slices. Place them in a large dish and generously soak them with the flavored milk, ensuring they absorb the liquid well.
  5. In a pan, prepare the caramel by melting the sugar with a little water and butter over medium heat, stirring until a smooth, golden texture is achieved.
  6. Add the soaked bread slices to the pan with the caramel and cook on both sides until crispy on the outside, approximately 2-3 minutes per side.
  7. Serve the torrijas hot with a scoop of vanilla ice cream and sprinkle almond pieces on top for a creamy and crunchy contrast.
