Crispy Torrija with Caramel and Ice Cream
Perfect torrija for Easter: crispy on the outside, creamy on the inside, with caramel, vanilla ice cream, and almonds.

Ingredients
- 500 ml milk
- 250 ml cream
- 2 stick of cinnamon stick
- 5 units orange peel
- 5 units lemon peel
- 80 tablespoon of sugar
- 60 units egg
- 20 units egg yolk
- 240 thick slices brioche bread
- 100 g sugar
- 30 tablespoon of butter
- 500 package of vanilla ice cream
- 40 g almond
- 30 tablespoon of water
Method
- Pour the milk and cream into a pot. Add the cinnamon stick, orange peel, lemon peel, and sugar.
- Heat the mixture over medium heat and, just before it boils, remove it from the heat. Let it infuse for a few minutes.
- Whisk the egg and egg yolks in a bowl. Add them to the saucepan with the flavored milk and mix well until combined.
- Cut the brioche bread into thick slices. Place them in a large dish and generously soak them with the flavored milk, ensuring they absorb the liquid well.
- In a pan, prepare the caramel by melting the sugar with a little water and butter over medium heat, stirring until a smooth, golden texture is achieved.
- Add the soaked bread slices to the pan with the caramel and cook on both sides until crispy on the outside, approximately 2-3 minutes per side.
- Serve the torrijas hot with a scoop of vanilla ice cream and sprinkle almond pieces on top for a creamy and crunchy contrast.
