Sweet Potato Bowl with Lean Meat and Avocado Sauce

Ingredients
- 600 units sweet potato
- 5 to taste extra virgin olive oil
- 5 to taste salt
- 2 to taste pepper
- 3 to taste garlic powder
- 150 units onion
- 400 g lean ground beef
- 4 to taste ground cumin
- 5 to taste paprika
- 60 tablespoon of tomato paste
- 5 to taste salt
- 100 g mozzarella cheese
- 170 units avocado
- 120 g Greek yogurt
- 40 units lime
- 15 tablespoon of extra virgin olive oil
- 2 to taste garlic powder
- 2 to taste ground cumin
- 2 to taste black pepper
- 3 to taste salt
- 20 dash of water
- 15 to taste fresh chives
Method
- Dice the sweet potatoes and drizzle lightly with extra virgin olive oil. Season with salt, pepper, and garlic powder.
- Chop the onion. In a bowl, mash the avocado with Greek yogurt, lime juice, extra virgin olive oil, garlic powder, ground cumin, black pepper, and salt. Add a splash of water to adjust the texture and blend until a creamy sauce is formed.
- Mix the ground beef with ground cumin and paprika.
- Air fry the sweet potato cubes for 15 minutes at 200 degrees.
- Sauté the onion in a pan. Once softened, add the ground beef, ground cumin, paprika, tomato paste, and salt. Mix well and cook until done. Stir in the mozzarella cheese and mix again.
- Blend the avocado sauce until smooth.
- Assemble the bowl with a base of roasted sweet potato, spiced meat on top, creamy avocado sauce, and finish with chopped fresh chives.
