Couscous with Vegetables and Pork Loin
Quick and complete one-dish meal with couscous, fresh vegetables, and sautéed sirloin, perfect for summer.

Ingredients
- 600 g couscous
- 200 units zucchini
- 75 units red pepper
- 75 units green pepper
- 75 units onion
- 480 fillet of pork loin
- 60 tablespoon of olive oil
- 5 teaspoon of butter
- 5 to taste salt
Method
- Dice the peppers and onion.
- Finely dice the zucchini.
- Cut the pork loin fillets into strips.
- Bring salted water to a boil in a saucepan.
- Remove from heat, add the couscous, cover, and let rest for 5 minutes.
- Heat a large pan with olive oil.
- Add the vegetables and sauté over medium heat, stirring occasionally.
- Season the vegetables just before removing from heat.
- Heat another pan with olive oil.
- Sauté the pork strips until cooked through.
- Add the pork with its juices to the vegetable pan and set aside.
- Uncover the couscous, add the butter, and stir well with a fork.
- Add the couscous to the pan with the vegetables and pork.
- Sauté everything together over moderate heat for a few minutes, stirring well to combine the flavors.
