Couscous with Vegetables and Pork Loin

  1. Dice the peppers and onion.
  2. Finely dice the zucchini.
  3. Cut the pork loin fillets into strips.
  4. Bring salted water to a boil in a saucepan.
  5. Remove from heat, add the couscous, cover, and let rest for 5 minutes.
  6. Heat a large pan with olive oil.
  7. Add the vegetables and sauté over medium heat, stirring occasionally.
  8. Season the vegetables just before removing from heat.
  9. Heat another pan with olive oil.
  10. Sauté the pork strips until cooked through.
  11. Add the pork with its juices to the vegetable pan and set aside.
  12. Uncover the couscous, add the butter, and stir well with a fork.
  13. Add the couscous to the pan with the vegetables and pork.
  14. Sauté everything together over moderate heat for a few minutes, stirring well to combine the flavors.
