Rice Cooker Hainanese Chicken

A simplified version of the classic Hainanese chicken made entirely in your rice cooker with homemade sauces.

  1. Mince or grate the garlic and ginger.
  2. Chop the scallions.
  3. In a bowl, mix the chicken with the sesame oil and salt.
  4. In a small bowl, combine the ginger, scallions, sesame oil, salt, and sunflower oil for the ginger and scallion sauce.
  5. In another bowl, mix the garlic, ginger, sambal, sriracha, chicken broth, lime juice, and sugar for the chili sauce.
  6. Add the jasmine rice, garlic, ginger, scallions, chicken broth, concentrated chicken broth, and turmeric to the rice cooker pot.
  7. Place the marinated chicken over the rice mixture.
  8. Cook in the rice cooker until the rice is tender and the chicken is fully cooked.
  9. Serve the rice on a plate and place the chicken on top.
  10. Serve with the prepared sauces.
