Cold Somen with Scallops and Kombu
Elegant cold somen noodles with scallion oil, fresh scallop sashimi, and ikura.

Ingredients
- 120 ml olive oil
- 150 units scallion
- 20 g dried shrimp
- 200 g somen noodles
- 30 g salted kombu
- 50 ml dashi
- 100 units scallop
- 40 g ikura
Method
- Grind the dried shrimp into a fine powder.
- Finely chop the scallions.
- Slice the scallops thinly.
- Rinse the cooked somen noodles in cold water until the starch is removed and they are no longer sticky.
- In a large bowl, mix the noodles with the flavored oil and salted kombu.
- Add the dashi to the noodle mixture to maintain a light and clean color.
- Refrigerate the mixture until ready to serve.
- Pour the olive oil into a pot over low heat.
- Add the chopped scallions and dried shrimp powder to the oil.
- Cook over low heat until the scallions are golden and crispy.
- Strain the oil to remove the solids and let it cool completely.
- Form the somen noodles into a nest and place on the plate.
- Arrange the scallop slices over the noodles.
- Top the dish with a portion of ikura.
