Mushroom Risotto
A creamy and comforting risotto made with a mix of fresh mushrooms and a touch of Italian cheese.

Ingredients
- 60 cup of arborio rice
- 300 units portobello mushroom
- 50 units shiitake mushroom
- 100 units oyster mushroom
- 15 tablespoon of olive oil
- 60 tablespoon of butter
- 40 cup of shallot
- 800 cup of caldo de verduras
- 40 cup of Parmesan cheese
- 40 cup of pecorino cheese
- 10 to taste thyme
- 5 to taste Salt
- 2 to taste Pepper
- 5 clove of garlic
Method
- Chop the portobello mushrooms, shiitake mushrooms, and oyster mushrooms.
- Finely chop the shallot and garlic clove.
- Heat the vegetable broth in a pot until very hot.
- Heat a pan with olive oil over medium heat.
- Sauté the chopped mushrooms with garlic, salt, and pepper until golden.
- Remove the mushrooms from the pan and set aside.
- Melt a portion of the butter in the same pan over medium heat.
- Add the rice and toast for 2 minutes, stirring constantly.
- Add the chopped shallot and cook for 1 minute.
- Pour a ladleful of hot broth over the rice and stir constantly until absorbed.
- Repeat the process of adding broth and stirring until the rice is al dente, about 18 minutes.
- Turn off the heat and add the sautéed mushrooms, thyme, the remaining cold cubed butter, and the grated cheeses.
- Stir vigorously until a creamy and emulsified texture is achieved.
- Serve the risotto immediately in a deep dish.
