Grilled Salmon with Tomato Salad
Juicy grilled salmon served with a fresh tomato salad, garlic, and aromatic refrito.

Ingredients
- 1000 g salmon
- 5 to taste salt
- 100 g wheat flour
- 100 ml sunflower oil
- 75 ml olive oil
- 1.25 units garlic
- 3.75 to taste parsley
- 300 units tomato
- 7.5 units garlic
- 38 ml vinaigrette
Method
- Prepare the fish sofrito: peel and mince the garlic.
- Add the chopped parsley to the sofrito.
- Prepare the tomato and garlic salad: peel and dice the tomatoes.
- Peel and mince the garlic for the salad.
- Mix the tomatoes with the garlic and vinaigrette.
- Salt the salmon and dredge it in flour.
- Heat the sunflower oil in a griddle.
- Cook the salmon on the griddle until it's perfectly done.
- Place the salmon on the plate with a spatula.
- Spoon the sofrito over it and sprinkle with chopped parsley.
- Add the tomato and garlic salad as a side dish.
