  1. Prepare the coffee and let it cool completely.
  2. Separate the egg yolks from the whites into two different bowls.
  3. Whip the yolks with sugar using electric beaters for 5 minutes until a frothy mixture is obtained.
  4. Add half of the mascarpone cheese to the yolks and beat until combined.
  5. Incorporate the rest of the mascarpone with a spatula using gentle, upward folding motions.
  6. Clean and dry the beaters, then whip the egg whites until stiff peaks form.
  7. Add the whipped egg whites to the mascarpone cream little by little, integrating them with the spatula using soft, folding motions.
  8. Dip the ladyfingers in the cold coffee on both sides, being careful not to over-soak them.
  9. Cover the bottom of a dish or individual glasses with a layer of ladyfingers.
  10. Spread a layer of mascarpone cream over the ladyfingers.
  11. Repeat the layering process of ladyfingers and cream until all ingredients are used.
  12. Dust the surface with pure cocoa powder using a fine sieve.
  13. Cover with plastic wrap and let it rest in the refrigerator for at least 2 hours before serving.
