  3. Incorporate the eggs, egg yolk, and vanilla extract, beating until fully integrated.
  4. Add the chopped chocolate and mix briefly.
  5. Add the flour, baking powder, baking soda, and salt, mixing gently until the dry ingredients are just combined without overmixing.
  6. Divide the dough into equal portions, forming balls.
  7. Place the dough balls on a tray and freeze them for at least 30 minutes.
  8. Preheat the oven to 165-170°C.
  9. Bake the cookies for 10-15 minutes until the edges are golden and the center remains soft.
  10. Remove from the oven and let cool slightly before serving.
