Spicy Garlic Beef Noodles

  1. Slice the beef thinly.
  2. Lightly coat the beef with cornstarch.
  3. Julienne the onion.
  4. Chop the spring onion, separating the white and green parts.
  5. Finely mince the garlic cloves.
  6. In a bowl, mix the soy sauce, oyster sauce, chili paste, sugar, and rice vinegar.
  7. Bring water to a boil in a pot and cook the noodles according to package instructions.
  8. Drain the noodles and set aside.
  9. Heat a large pan with a splash of oil over high heat.
  10. Add the beef and stir-fry until browned.
  11. Add the onion and the white part of the spring onion to the pan.
  12. Sauté for 2 minutes until the onion softens.
  13. Add the minced garlic and cook for 30 seconds.
  14. Add the cooked noodles to the pan.
  15. Pour the sauce mixture over the noodles.
  16. Mix vigorously with tongs for 1 minute over high heat so the sauce reduces and caramelizes.
  17. Serve the noodles in a deep dish.
  18. Garnish with the chopped green part of the spring onion and sesame seeds.
