Baked Chicken Breasts with Zucchini and Cheese
Succulent baked chicken breasts stuffed with zucchini and cheese, with an irresistible basil and almond sauce. Easy and healthy.

Ingredients
- 800 units chicken breast
- 250 units zucchini
- 120 slice of cheese
- 5 to taste salt
- 2 to taste pepper
- 15 leaf of fresh basil
- 18 units almond
- 40 units lemon
- 30 a dash of virgin olive oil
Method
- Slice the zucchini into not-too-thin rounds.
- Slice the cheese thinly if it's a goat cheese log.
- Make cuts in the chicken breasts, not all the way through.
- Place a slice of zucchini and a slice of cheese in each cut.
- Season the chicken breasts with salt and pepper.
- Place the chicken breasts on a baking tray with a dash of olive oil.
- Prepare the basil sauce: put the fresh basil leaves, almonds, lemon juice, salt to taste, and a dash of olive oil into a food processor.
- Blend well until you get the desired texture, leaving small pieces of almond if you prefer.
- Spread some sauce on top of the chicken breasts.
- Drizzle the chicken breasts with a dash of virgin olive oil.
- Preheat the oven to 180ºC with top and bottom heat.
- Bake the chicken breasts for about 30 minutes.
- Remove the chicken breasts from the oven and serve hot.
