Pastina Soup

Ingredients
- 1440 cup of chicken broth
- 1440 cup of vegetables
- 960 cup of water
- 120 sprig of celery
- 240 units carrot
- 30 clove of garlic
- 150 units onion
- 5 teaspoon of Salt
- 15 tablespoon of concentrated chicken broth
- 300 g or orzo
- 300 g ditalini
- 50 g Parmesan cheese
Method
- Carefully wash all vegetables under the tap and dry with paper towels.
- Finely chop the onion and garlic cloves for a uniform aromatic base.
- Dice the carrots and celery stalks into small, regular pieces to ensure even cooking.
- Finely grate the Parmesan cheese to better integrate it when serving.
- Sauté the onion, garlic, carrot, and celery in a large pot with a splash of oil until tender.
- Stir in the chicken broth, water, and chicken concentrate, bringing the mixture to a boil.
- Add the orzo and ditalini to the pot, adjust salt, and cook over medium heat until the pasta is al dente.
- Remove from heat and let rest for a few minutes to allow the flavors to set properly.
- Serve the soup in deep bowls and sprinkle generously with grated Parmesan cheese before serving.
