Baked Oat and Banana Cups
Delicious baked oat, banana and chocolate cups, perfect for meal prep and enjoying throughout the week.

Ingredients
- 510 units ripe banana
- 150 g Greek yogurt
- 120 units egg
- 5 teaspoon of vanilla extract
- 120 g Oat flakes
- 30 g protein powder
- 5 teaspoon of baking powder
- 2 to taste Salt
- 40 to taste dark chocolate chips
- 170 units banana
- 10 to taste powdered sugar
Method
- Peel the bananas and mash them in a large bowl with a fork until smooth.
- Add the Greek yogurt, eggs, and vanilla extract to the bowl and mix until combined.
- Grind the oat flakes until they become fine flour.
- Add the oat flour, protein powder, baking powder, and salt to the wet mixture.
- Stir vigorously until a homogeneous batter is formed.
- Add the dark chocolate chips and mix gently to distribute them.
- Preheat the oven to 180°C.
- Divide the batter evenly into individual oven-safe dishes previously lined with parchment paper.
- Slice the extra banana and place the slices on top of each cupcake.
- Sprinkle some additional chocolate chips over the batter.
- Bake for 20 to 25 minutes until the cupcakes are golden brown and firm.
- Remove from the oven and let cool slightly.
- Dust a little powdered sugar over the cupcakes before serving.
