Crispy Chicken Pasta Caesar Salad

Ingredients
- 625 g short pasta
- 300 cup of romaine lettuce
- 125 units cucumber
- 100 units red onion
- 20 handful of fresh parsley
- 100 g grated Parmesan
- 250 units chicken breast
- 15 tablespoon of butter
- 7.5 teaspoon of sweet paprika
- 1.5 teaspoon of oregano
- 5 to taste salt
- 2 to taste black pepper
- 30 tablespoon of olive oil
- 3.75 teaspoon of salt
- 1.25 teaspoon of black pepper
- 2.5 teaspoon of garlic powder
- 7.5 teaspoon of smoked paprika
- 45 tablespoon of plain yogurt
- 45 tablespoon of mayonnaise
- 5 teaspoon of Dijon mustard
- 20 clove of garlic clove
- 30 tablespoon of lemon juice
- 15 tablespoon of olive oil
- 3 teaspoon of salt
- 1 teaspoon of black pepper
- 30 tablespoon of grated Parmesan
Method
- Dice the chicken breast into small pieces.
- Chop the romaine lettuce, fresh parsley, dice the cucumber, and thinly slice the red onion.
- Grate the garlic cloves. In a bowl, whisk together the plain yogurt, mayonnaise, Dijon mustard, lemon juice, olive oil, salt, black pepper, and grated Parmesan until you have a creamy and smooth sauce. Taste and adjust with more yogurt or mayonnaise if you prefer a more intense flavor.
- Cook the pasta in boiling salted water according to package directions until al dente.
- Drain the pasta and let it rest until completely steam-dried.
- Preheat the oven to 200 °C with fan assist. Spread the pasta on a baking sheet, toss with olive oil, and season with salt, black pepper, garlic powder, and smoked paprika.
- Bake for 25-30 minutes until golden and crispy.
- Heat a pan with butter, add the chicken cubes, paprika, oregano, salt, and black pepper to taste, and cook until golden and done.
- In a large bowl, combine the cooked chicken, lettuce, cucumber, red onion, and parsley. Pour the creamy dressing over and mix gently.
- Scatter the crispy baked pasta over the top and sprinkle with more grated Parmesan. Serve immediately for maximum crispiness and creaminess.
