Broccoli Carbonara with Mushrooms
Creamy carbonara broccoli with portobello mushrooms, ham, and cheese. A healthy dinner ready in minutes that will make you love vegetables.

Ingredients
- 250 units broccoli
- 150 g portobello mushroom
- 100 g cured ham
- 80 g pecorino romano cheese
- 80 g parmesan cheese
- 80 units egg yolk
- 2 to taste black pepper
- 5 to taste salt
Method
- Wash the broccoli well and cut the florets.
- In a bowl, add the egg yolks, grated Pecorino Romano or grated Parmesan cheese, ground black pepper, and some of the reserved cooking water. Mix until obtaining a creamy texture.
- Cook the broccoli in plenty of salted water for 5 minutes. Drain it and reserve a glass of the cooking water.
- In a pan over medium heat, brown the diced cured ham. Add the sliced portobello mushrooms and cook until ready. Incorporate the cooked broccoli, the prepared carbonara sauce, and mix everything well with the heat off.
- Distribute the dish among plates and top with more grated cheese.
