  1. Place the cooked potatoes in a large bowl and mash them with a fork until smooth.
  2. Add the chopped chives, salt, pepper, paprika, and olive oil to the mash.
  3. Gradually incorporate the flour and mix with your hands until you get a manageable, non-sticky dough.
  4. Take a portion of dough and flatten it in the palm of your hand to form a disk.
  5. Place a portion of minced meat in the center of the disk and sprinkle the grated cheese on top.
  6. Close the edges of the dough towards the center, covering the filling, and flatten lightly to form a compact pocket.
  7. Heat a frying pan with a little olive oil over medium heat.
  8. Cook the potato pockets on both sides until they are golden and crispy.
  9. Remove the pockets from the pan and serve immediately while the cheese is still melted.
