Tender Torrija with Caramel and Ice Cream
Tender brioche 'torrija', crispy on the outside, infused in milk with citrus, and served with ice cream.

Ingredients
- 500 liter milk
- 500 liter cream
- 3 g cinnamon stick
- 10 g orange peel
- 8 g lemon peel
- 80 tablespoons sugar
- 400 slice of brioche
- 100 cup of sugar
- 30 tablespoons water
- 50 g butter
- 2000 pack of vanilla ice cream
Method
- Heat equal parts milk and cream with the cinnamon stick, orange peel, and lemon peel.
- Stir in the sugar and, when the mixture is about to boil, turn off the heat and let it infuse until it cools.
- Slice the brioche and place the slices on a tray.
- Strain the infused milk once cooled, pour it over the brioche, and let it rest for at least an hour, drizzling with more mixture if needed.
- Prepare a caramel by melting the sugar with a little water in a pan.
- Add the butter to the caramel and remove from heat to prevent it from burning.
- Dip each brioche slice in the caramel for 5 seconds on each side.
- Plate the torrijas with a scoop of vanilla ice cream on top and serve immediately.
