Method

  1. Clean the chicken thighs of fat and marinate them with the sweet paprika, garlic powder, salt, black pepper, and a generous drizzle of olive oil.
  2. Rub the spices well all over the chicken and let it rest in the refrigerator for a couple of hours.
  3. Finely chop the onion and garlic cloves.
  4. Heat a wide pan or shallow pot over high heat and brown the chicken on both sides until well seared.
  5. Remove the chicken and, in the same pan, sauté the onion and garlic over low heat until they get some color.
  6. Deglaze with the white wine and reduce over high heat until evaporated.
  7. Add the Dijon mustard and honey, and mix well with the sautéed ingredients.
  8. Return the browned chicken to the pan and pour in the chicken broth.
  9. Cover and simmer over low heat for about 20 minutes, until the chicken is tender.
  10. Add the cooking cream and integrate well.
  11. Reduce the sauce over medium heat for about 5-10 minutes, until it thickens and reaches the desired consistency.
  12. Adjust salt if needed.
  13. Sprinkle chopped fresh parsley on top before serving.
