  1. Chop the garlic and fresh parsley.
  2. Soak the bread in milk and mash it.
  3. In a bowl, mix the ground meat with the garlic, parsley, eggs, and mashed bread.
  4. Integrate all ingredients well and let the mixture rest in the fridge.
  5. Form the meatballs by hand, trying to make them a similar size.
  6. Coat the meatballs in flour and shake them to remove excess.
  7. Prepare a paste with the garlic and saffron strands.
  8. Dice the onion and green pepper.
  9. Heat a large pan with olive oil.
  10. Brown the meatballs until sealed on the outside and set aside.
  11. Strain the used oil and pour it back into the pan.
  12. Sauté the onion and green pepper in the strained oil.
  13. Add the garlic and saffron paste along with the crushed tomatoes and cook for 5 minutes.
  14. Add the red wine and let it boil for 2 minutes.
  15. Blend the sauce with a mixer until a fine texture is obtained.
  16. Add the meatballs, bay leaves, water, and thinly sliced carrots.
  17. Cook over low heat for 25 minutes.
  18. Fry the thinly sliced potatoes in a separate pan until ready.
  19. Serve the meatballs with their sauce in a deep dish.
  20. Serve with the freshly made fried potatoes.
