Baked Sweet Potato with Guacamole, Egg, and Jamón
Roasted sweet potato with creamy guacamole, egg and crispy Serrano ham bits. Healthy and delicious.

Ingredients
- 50 units Egg
- 250 units Sweet potato
- 5 to taste Salt
- 3 to taste Sweet paprika
- 2 to taste Thyme
- 2 to taste Oregano
- 2 to taste Pepper
- 15 tablespoon of Extra virgin olive oil
- 150 units Avocado
- 75 units Tomato
- 50 units Onion
- 10 to taste Extra virgin olive oil
- 20 ml Lemon juice
- 1 to taste Pepper
- 3 to taste Salt
- 15 to taste Parsley
- 50 handful of Ham cubes
Method
- Wash the sweet potato and dry it well. Make a few shallow cuts with a knife.
- Prepare the guacamole: mash the avocado in a bowl, add the chopped tomato, chopped onion, squeezed lemon juice, extra virgin olive oil, pepper, salt, and parsley. Mix everything until you get a homogeneous cream.
- Cut the ham into small cubes.
- Brush the sweet potato with extra virgin olive oil and sprinkle with salt, sweet paprika, thyme, oregano, and pepper. Bake in the oven or air fryer at 200 degrees for 40 minutes until tender and crispy on the outside.
- Put the ham cubes in the microwave at full power for 1 minute until crispy.
- Cook the egg as you prefer: fried, soft-boiled, or poached.
- Cut the sweet potato in half lengthwise from the top and fill it with guacamole, cooked egg, and crispy ham cubes. Serve immediately.
