Cheeseburger Tacos with Caramelized Onions

Crispy tacos with smash meat, caramelized onion, melted cheese, and an improved secret Big Mac-style sauce

  1. Very thinly slice the onion.
  2. Finely chop the fresh parsley.
  3. Shred or thinly slice the lettuce.
  4. Finely chop the dill pickle.
  5. In a small bowl, combine the Greek yogurt, ketchup, garlic powder, American mustard, coconut sugar, dill pickle, and pickle juice.
  6. Mix well until a smooth sauce is formed and set aside.
  7. Divide the lean ground beef into equal portions, one for each corn tortilla.
  8. Place a portion of meat onto each corn tortilla.
  9. Press down firmly with your hands to spread the meat in a thin layer to the edges of the tortilla.
  10. Generously sprinkle the BBQ seasoning over the meat.
  11. Heat a drizzle of olive oil in a large skillet over medium heat.
  12. Add the onion, maple syrup, and a pinch of salt.
  13. Cook for 25 minutes, stirring regularly, until the onion is golden and tender.
  14. If the pan dries out, add small splashes of water.
  15. Set aside the caramelized onion.
  16. Heat a large skillet or griddle over medium-high heat.
  17. Place the tortillas meat-side down in the pan.
  18. Cook for 2 to 3 minutes, pressing lightly so the meat browns and gets crispy.
  19. Flip the tortillas so the tortilla side is down.
  20. Place a slice of burger cheese over the meat.
  21. Cover the pan and cook for 1 minute, until the cheese is melted and the tortilla is lightly toasted.
  22. Repeat with the remaining tacos.
  23. Top each taco with the thinly sliced lettuce.
  24. Add the caramelized onion.
  25. Pour the burger sauce on top.
  26. Sprinkle with fresh chopped parsley.
