Cheeseburger Tacos with Caramelized Onions
Crispy tacos with smash meat, caramelized onion, melted cheese, and an improved secret Big Mac-style sauce

Ingredients
- 320 units corn tortilla
- 500 g lean ground beef
- 25 to taste BBQ seasoning
- 160 slice of cheese
- 120 g lettuce
- 450 units onion
- 30 ml maple syrup
- 20 g fresh parsley
- 120 g Greek yogurt
- 60 g ketchup
- 5 g garlic powder
- 15 ml American mustard
- 10 g coconut sugar
- 40 g dill pickle
- 5 ml pickle juice
- 15 to taste olive oil
- 5 to taste salt
Method
- Very thinly slice the onion.
- Finely chop the fresh parsley.
- Shred or thinly slice the lettuce.
- Finely chop the dill pickle.
- In a small bowl, combine the Greek yogurt, ketchup, garlic powder, American mustard, coconut sugar, dill pickle, and pickle juice.
- Mix well until a smooth sauce is formed and set aside.
- Divide the lean ground beef into equal portions, one for each corn tortilla.
- Place a portion of meat onto each corn tortilla.
- Press down firmly with your hands to spread the meat in a thin layer to the edges of the tortilla.
- Generously sprinkle the BBQ seasoning over the meat.
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Add the onion, maple syrup, and a pinch of salt.
- Cook for 25 minutes, stirring regularly, until the onion is golden and tender.
- If the pan dries out, add small splashes of water.
- Set aside the caramelized onion.
- Heat a large skillet or griddle over medium-high heat.
- Place the tortillas meat-side down in the pan.
- Cook for 2 to 3 minutes, pressing lightly so the meat browns and gets crispy.
- Flip the tortillas so the tortilla side is down.
- Place a slice of burger cheese over the meat.
- Cover the pan and cook for 1 minute, until the cheese is melted and the tortilla is lightly toasted.
- Repeat with the remaining tacos.
- Top each taco with the thinly sliced lettuce.
- Add the caramelized onion.
- Pour the burger sauce on top.
- Sprinkle with fresh chopped parsley.
