  1. Dice the chicken breast into uniform pieces.
  2. Finely chop the chili, garlic cloves, and red onion.
  3. Slice the spring onion thinly.
  4. Whisk the eggs in a small bowl.
  5. Heat a large pan over medium-high heat.
  6. Add the diced chicken to the pan along with the garlic, onion, chili, and Chinese five-spice powder.
  7. Cook until the chicken is golden brown.
  8. Stir in the spring onion, sweet chili sauce, and dark soy sauce, mixing well to combine the flavors.
  9. Add the cooked rice to the pan and mix everything until the rice turns a golden color.
  10. Move the mixture to one side of the pan.
  11. Pour the beaten eggs into the empty space in the pan and add a dash of soy sauce over them.
  12. Scramble the eggs until set and mix them with the rest of the ingredients.
  13. Add the frozen peas and cook for 3 minutes until tender.
  14. Serve the fried rice in individual containers for your meals of the week.
