Flamenco Eggs
Classic Sevillan recipe for eggs with fried tomato, ham, and peas. A simple, homemade dish, perfect for using leftovers.

Ingredients
- 150 units onion
- 10 clove of garlic
- 120 handful pea
- 60 to taste Serrano ham
- 240 cup of fried tomato sauce
- 180 units egg
- 20 dash of olive oil
Method
- Peel and chop the onion.
- Peel and chop the garlic cloves.
- Cut the Serrano ham into small pieces.
- Heat a pan with olive oil.
- Sauté the garlic and onion until golden.
- Add the peas and sauté everything together.
- Add the Serrano ham and cook briefly.
- Pour in the fried tomato sauce and mix well.
- Crack the eggs and add the whites first so they cook well.
- Place the yolks on top and cook for a few minutes until done to your liking.
- Serve directly from the pan with bread for dipping.
