  1. Finely chop the onion, garlic cloves, and scallion. Dice the potatoes into small cubes.
  2. In a bowl, mix the spices: salt, garlic powder, onion powder, smoked paprika, black pepper, chili powder, and cumin to prepare the breakfast seasoning.
  3. Heat a pan with olive oil and sauté the onion until golden. Add the lean ground beef and minced garlic cloves, cook until browned. Stir in the bone broth and beef base, season with the prepared seasoning, and cook until ready. Remove from heat.
  4. Meanwhile, fry the diced potatoes in the air fryer until crispy. In the same pan, pour the eggs and cook until fluffy, season with salt and pepper to taste. Prepare the creamy avocado sauce by blending the ripe avocado, Greek yogurt, sour cream, lime juice, garlic clove, salt, and water until smooth and fluid.
  5. Place the beef and potato filling, eggs, grated cheese, and chopped scallion in each whole wheat tortilla. Roll into burritos and brown in a pan over medium-high heat until golden on both sides. Serve with the creamy avocado sauce on top.
