Healthy Air Fryer Cheesecake
Fit and quick cheesecake with ricotta and erythritol, perfect for sweet cravings. Creamy or firm depending on baking time.

Ingredients
- 200 tub of ricotta cheese
- 100 g light cream cheese
- 120 units egg
- 5 to taste vanilla extract
- 15 teaspoon of erythritol
- 25 to taste protein powder
Method
- In a bowl, add the ricotta cheese, light cream cheese, eggs, vanilla extract, erythritol, and, if desired, protein powder.
- Whisk everything with manual or electric beaters until you get a smooth and homogeneous mixture. Taste the mixture to ensure it's delicious.
- Line a springform pan suitable for an air fryer with parchment paper, pour in the mixture, and tap lightly to settle.
- Preheat the air fryer to 180 °C. Cook for 19-20 minutes for a creamy inside or 30 minutes for a more set consistency.
- Do not open the air fryer during cooking; check that the surface is golden brown and slightly soft inside.
- Remove from the air fryer and let cool completely.
- Carefully unmold using the parchment paper and serve.
