Beef, black pudding and avocado tacos
Crispy spelt tacos filled with beef, black pudding and a fresh avocado and vegetable mix.

Ingredients
- 120 units spelt tortillas
- 300 g ground beef
- 30 tablespoon of tomato paste
- 170 units avocado
- 120 units tomato
- 75 units red pepper
- 75 units Yellow bell pepper
- 15 units lemon
- 100 g morcilla
- 100 g mozzarella
Method
- Chop the tomato, red pepper, and yellow pepper into small pieces.
- Dice the avocado and mix it in a bowl with the chopped tomato and peppers.
- Add a splash of lemon juice to the vegetable and avocado mixture and stir well.
- Crumble the morcilla with your hands or a fork.
- Preheat the air fryer to 180°C.
- Bake the spelt tortillas in the air fryer until golden and crispy.
- Cook the ground beef in a pan over medium heat with the tomato paste until well browned.
- Fill the crispy tortillas with the meat mixture and the avocado and vegetable preparation.
- Add the crumbled morcilla over the filling of each taco.
- Cover the tacos with the shredded mozzarella.
- Place the tacos in the air fryer for a few minutes until the cheese is perfectly melted.
- Serve the tacos immediately while the cheese is hot and melted.
