Arriera Potatoes with Garlic Shrimp
Crispy fried potatoes with homemade aioli and garlic shrimp. Easy traditional dish that's always a hit at the table.

Ingredients
- 600 units potato
- 100 to taste sunflower oil
- 250 milliliters sunflower oil
- 5 clove of garlic
- 60 units egg
- 20 dash lemon juice
- 5 to taste salt
- 20 head of garlic
- 300 units shrimp
- 3 to taste salt
- 5 units chilli
- 15 to taste parsley
- 60 dash white wine
- 5 a little bit of paprika
Method
- Peel the potatoes.
- Cut them into medium-thick slices.
- Add the sunflower oil, garlic clove, egg, lemon juice, and salt to a container.
- Insert the blender to the bottom and blend until emulsified and the aioli rises.
- Store the aioli in the refrigerator.
- Slice the head of garlic.
- Fry the potatoes in hot oil until crispy on the outside and tender on the inside.
- Heat oil in a pan.
- Add the sliced garlic and brown it.
- Add the shrimp, salt, chili, and parsley.
- Stir a couple of times.
- Pour in the white wine.
- Add the paprika and stir a couple more times.
- Spread the aioli over the fried potatoes and rub lightly.
- Pour the shrimp with their broth over the top.
