Sweet Potato Nachos

Ingredients
- 250 units sweet potato
- 5 to taste salt
- 2 to taste pepper
- 5 to taste paprika
- 5 to taste garlic powder
- 150 g lean ground beef
- 15 tablespoon of seasoning
- 120 units tomato
- 50 g shredded cheese
- 30 tablespoon of sour cream
- 30 tablespoon of Greek yogurt
- 50 g guacamole
- 30 units red onion
- 15 g cilantro
- 25 g lime
Method
- Cut the sweet potato into uniform slices or wedges.
- Season the sweet potato with salt, pepper, paprika, and garlic powder.
- Chop the tomato, red onion, and fresh cilantro.
- Mix the tomato, onion, and cilantro with lime juice to prepare the pico de gallo.
- Preheat the oven to 200°C.
- Bake the sweet potato slices until tender and lightly golden.
- Heat a skillet over medium heat and cook the lean ground beef.
- Add the taco seasoning to the meat and stir until well combined and cooked through.
- Arrange the sweet potato slices on a large platter.
- Distribute the ground beef over the sweet potato.
- Add shredded cheese, pico de gallo, guacamole, Greek yogurt, and sour cream on top.
