Plantain empanadas with meat and cheese

  1. Peel the plantains and cut them into pieces.
  2. Mash the cooked plantains until smooth.
  3. Add the cornstarch, salt, and paprika to the plantain mash.
  4. Mix the ingredients until a uniform dough is formed.
  5. Chop the onion and bell peppers into small pieces.
  6. Season the ground meat with garlic powder, pepper, and salt.
  7. Chop the fresh cilantro.
  8. Boil the plantains in a pot with water until tender.
  9. Heat a pan with a splash of oil and sauté the onion and bell peppers.
  10. Add the ground meat to the pan and cook for 5 minutes.
  11. Add the tomato sauce, tomato paste, and water to the meat.
  12. Cook the mixture over medium heat until the liquids reduce, then finish by adding the cilantro.
  13. Grease your hands with oil to prevent the dough from sticking.
  14. Form a tortilla with the plantain dough using a press or two flat surfaces.
  15. Place a portion of meat and mozzarella cheese in the center of the tortilla.
  16. Fold the tortilla over the filling and seal the edges well.
  17. Fry the empanadas in a pan with plenty of hot oil until golden brown.
  18. Remove the empanadas from the pan and place them on absorbent paper to remove excess grease.
