Garlic Mushrooms with White Wine

Classic Spanish tapa with sautéed mushrooms in garlic, white wine, and parsley. Perfect as an appetizer or side dish.

Method

  1. Cut off the bottom part of the mushroom stem where it has been in contact with the soil.
  2. Wipe each mushroom with a damp cloth or paper to remove any remaining soil.
  3. Slice the mushrooms.
  4. Slice the garlic, not too thinly.
  5. Chop the parsley.
  6. Heat the olive oil in a pan over low heat.
  7. Sauté the garlic until it begins to brown.
  8. Add the sliced mushrooms and cook over high heat for 6 to 8 minutes, stirring so they cook evenly.
  9. Pour in the white wine and cook for another 4 or 5 minutes until it evaporates.
  10. Season with salt and freshly ground black pepper.
  11. Add the chopped parsley off the heat.
  12. Serve the garlic mushrooms hot as a tapa or side dish.
